A little something to go with your tea Denise.

Lemon Polenta Cakes

225g unsalted butter
225g caster sugar
3 eggs
110g almond meal (I used hazelnut as had no almond-tastes just as good !)
110g shredded coconut
110g fine polenta
grated zest 2 lemons & 2 1/2 tbsp lemon juice
1 tsp baking powder
1 tsp vanilla bean paste or extract

Makes 36,so grease 2 mini muffin tins. Beat butter & sugar until smooth,slowly beat in eggs one at a time,then fold in ground almonds,coconut,polenta,lemon zest & juice,baking powder & vanilla. Divide amongst muffin tins & bake at 150C for 20 - 30 mins until cakes are golden. Cool in the pan then turn out onto wire rack.
The icing is 225g icing sugar & lemon juice,mix until smooth then spoon over cakes,leave to set, then EAT !!

The recipe is from an australian company called Manna from Heaven who make gluten free treats & have just released a book. Very easy,good to look at & even better to eat !

I promise some savoury items next- I just keep forgetting to take photos of food I cook !!

Halvah Chocolate Balls or Power Balls

Finally made & posted something !

1 1/2 cups of dry almonds
1/2 cup raw tahini or sesame seeds
3 tbsp honey
1 tsp vanilla extract
1 tbsp cacao powder

If making tahini from sesame seeds,grind until a paste is formed adding some nut oil if necessary.
Add almonds,honey,vanilla & cacao powder into blender & blend until a dough is formed. Roll into balls the size of a walnut & roll in dessicated coconut. Refrigerate for at least an hour.

Nutella and Walnut Cake for Ian's Birthday

Got the recipe in Le Marche.

4 eggs
125 sugar
125 chopped walnuts
125g Nutella
125g butter
60g plain flour
0.5 teaspoon dried yeast
Pinch of salt.

  • Beat eggs with sugar.
  • Melt butter and nutella together.
  • Combine all ingredients.
  • Butter and flour a spring form pan - and fill with cake batter.
  • Cook at 375C for 20 mins or until 'cooked'.

Does not need anything else. Not sure what the yeast is for!! Forgot to take a photo. Sorry. Was all eaten in one sitting.

How long have you enjoyed cooking?

Since I was hungry and my parents weren't up yet. We'd grill bread and butter with sugar on top until Mum put a bolt on the kitchen door and ended our chances of burning the house down.
